Once the oysters reach 3 inches in length, they are hand culled for sale to market.
52 market size oysters are placed back into each bag and returned to the shallow water site until they are needed for sales.
The oysters are then brought to our packaging facility where they are packed 102 per waxed box. Each box contains our harvesting label with the date and location of harvest as well as the shipped date.
Once the oysters are packed in the box, they are ready for shipment to any of our various merchants on the island, Boston or New York.
